摘要:研究定西地产"黑美人"马铃薯中花青素的提取工艺,比较不同提取溶剂对花青素提取率的影响。结果表明,用0.5%盐酸-乙醇作为提取溶剂提取"黑美人"马铃薯中花青素的提取率最高,提取率为3.68 mg/100 g鲜重。
Anthocyanin, belonging to the class of flavonoid compound, is a water-soluble natural pigment widely existing in the plants of the nature. Substances of the class of flavonoid possess many activities, which have the high potential value of exploiting and using. The paper firstly studied the extraction technology of anthocyanin from potato Heimingrong produced in Dingxi, and then compared the effect of different extraction solvents on the extraction rate of anthocyanin. The results indicated 0.5%hydrochloric acid-ethanol present the highest rate of extraction of anthocyanin, i.e. 3.68 mg/100 g fresh weight.
