摘要:采用正交试验对决明子中抗氧化成分的提取工艺条件进行优选,并通过测定抗氧化成分对·OH和O2-·的清除率和还原力研究其抗氧化活性。最佳的提取条件为:温度75℃,固液比1∶12,提取时间2 h。决明子中抗氧化成分对·OH和O2-·具有一定的清除能力,且随浓度的增大抗氧化性增强,其还原力也显著增强。该研究为决明子在食品和医药行业的应用提供了科学依据。
To optimize the extracting conditions of antioxidant components from cassia seed and to determine its antioxidant activity. The extraction conditions were optimized by orthogonal test. The scavenging rate of cassia seed extracts to superoxide anion radical ·OH and hydroxyl radical O2-· and reducing power were determined to study its antioxidant activity. The results showed that the optimal extracting conditions were as follows: temperature is 75℃, solid- liquid ratio is 1:12, and extraction time is 2 h. The antioxidant components in cassia seed had certain scavenging ability to · OH 和 O2-·, and it increased with increasing concentration of antioxidant components. With increasing concentration of antioxidant components, the reducing power of it significantly increased. This study provided scientific basis for application of cassia seed in the industry of food and medicine.
