摘要：蕨麻药食两用，其干制品严重皱缩、污垢藏于缝隙，食用、加工前的清洗非常困难，常用的手工、机械揉搓清洗容易造成营养成分流失。本文基于文献研究的基础上，将清洗后的感官要求为目标，以自来水为清洗液，用频率为40KHz的低频超声波清洗机，进行清洗液的温度、清洗功率、时间组合试验，为蕨麻及其他根茎类干食材、药材超声清洗提供参数支持。
